Howdy! I would love to tell you all about this Beet & Onion salad, but it's kind of like this...
...at the moment, I am probably sitting on a beach somewhere several hundreds of miles away from home. With a book in hand. And my shades on. Watching the ocean. Or walking along the shore. Or lighthouse hunting. Or taking a nap. Or eating. Oh yeah, there must be food. Maybe a lobster boil? Or some crawfish. It's all good, man. It's all good.
It's vacation week! Yeah.
So, I shall leave you all with this oh-so-simple beet salad that I made. But didn't eat.
Beets were slowly roasted in the oven. Skins removed when cooled. Cubed & tossed with a Dijon viniagrette (Canning jars are my BFF's - what CAN'T you use them for???). Onions were thinly sliced and tossed in at the end. A little bit of basil for the "beauty shot". Just because.
