Under the wire (FFwD: Tomato-Cheese Tartlets)

"Under the wire" seems to be the theme of my life these days.

My normal, plan-in-advance, organized self has flown the coop.

Carefully prioritized lists with time lines and specific action items are a fleeting memory.

So goes the tomato tartlet.

A last minute throw together...

But I feel like I counterbalanced it by making the zucchini tagliatelle.. Four weeks early :-)

So, if something needed to be pulled off "under the wire", I guess the tomato cheese tartlet was the dish to do with it.

Pesto in the freezer. Check.

Tomatoes on the counter. Check.

Puff pastry, mozzarella. Store run.

Bake the pastry.

Layer it with pesto.

Throw on the cheese and a slice of tomato.

Run it under the broiler and drizzle on some balsamic and olive oil.

A grind of pepper.

Voila.

Under. The. Wire.

Oh, and if anyone knows where organized me is hiding, can you please send her back? I miss her.

This post participates in French Fridays with Dorie.

  2. Cher, I like the way you cut and layered the puff pastry. I thought about just making
one big "pizza" but changed my mind because the pastry is a bit difficult to cut. Hubby
and I enjoyed ours and I will definitely make them again. Yours look great.

  3. Great tartlets. When you (re)find your organized self, have her cloned and shipped to me. Lately, I'm two weeks late on everything.

  5. Yep, I didn't even look at the recipe until Thursday night and never would have managed it if a store run had been necessary. Somehow I still had puff pastry leftover in my freezer from something or other and I pretty much always have goat cheese. I love your little mini tarts, they look like they could be fancy appetizers at a cocktail party.

  7. Under the wire here as well. But for me under the wire is VERy early as far as FFwD is concerned. Phew. This only got done 'cause I had everything and hubby told me he was going to be late. Balsamic is a great touch!

  11. Cher, nice idea to serve the Tomato-Cheese Tartlets as a side dish - they look wonderfully fresh and so nice alongside the zucchini tagliatelle. Very nice picture!

  12. It's too hot to be organized. Blech! But what counts is the result, right? And you did it! Brava : )

  16. Cher, I think the organized you made the tagliatelle and then went on vacation - with ME! Lol, I haven't posted mine up either, though I've made it. I'm just having so much fun partying with the chilled out you right now ;)

  19. Organized me has gone missing this summer too!
So dishes like this one do come in handy and I love how it is full of short cuts :)

  20. I have no problem with "under the wire" as long as it's a dish I can throw together. Your tarts turned out great!

  21. Sometimes I believe that being organized is grossly over-rated (usually that is my excuse for when I am scatter-brained)! Your tarts look great, and definitely an awesome recipe to throw together.

  22. I love your individual tarts! They totally don't look under the wire. I was thinking that indie tarts would be great for a party. It's so cool to see it works so well!

  23. I seem to always be making our French Fridays dishes on Friday! Your thrown together tarts look beautiful.

Thanks for the kale pesto suggestion - I have a lot of kale in my garden now.

  24. Oh Cher, you and me both. It helps us prove that the recipes are truly quickk and easy. Isn't it amazing how puff pastry makes everything look pretty and fancy!?

  25. Those look great, Cher! At least you get in under the wire, can't say the same for me these days. I'm becoming chronically late which doesn't have the same flair as fashionably late, lol.

  26. You're so square, Cher. Like yours. And, your family is very lucky if they were served that dinner last week. They better not complain about you not being organized when you can put that on the table. I think order will be restored once you get your oldest daughter off to college --- that's a big order --- getting her ready and organized. Then you can just take a deep breath and put your life together again. You'll also spend a great deal of time missing her --- welcome to the "first chick flying the nest" syndrome.

  27. Just blame it on the Olympics - that's what I'm blaming not being done with the galette for BWJ on. They only happen once every four years! The normal non-sports loving me is completely gone for the 2 weeks of the Olympics and I hardly get anything done. I think your tarts look delish and I can't wait to see the tagliatelle in a few weeks!

  28. Beautiful tartlet! I'm finding it hard to be my usual organized self this summer too. I've occasionally even ignored my to-do list. I'm telling myself I'll get back to being organized in September :-)
