Resolutions? No, not really... (French Fridays with Dorie: Dressy Pasta "Risotto")

Hello.

Happy New Year.

Since this is my first post of 2014, this should be the obligatory lay-out-my-goals-and-resolutions post, right?

 
Okay, here goes...
 
I resolve to stop taking Instagram pictures of the turkeys in front of my office window.
 
Nah, never mind. I can't promise that. They amuse me waayyy to much. I will stay away from the obvious parallels to those on the opposite side of those windows.
 
I guess that leaves me with nothing.
 

 
One resolution that I could stand behind (if I were so inclined) is to hunt down more simple dishes like dressy pasta "risotto" to get on the dinner table.
 
This is mac-n-cheese at its easiest.
 
Sauté an onion in butter. Toss in some stock and pasta (roughly a two to one ratio) and simmer until the noodles are tender and most of the liquid is absorbed. Stir in some heavy cream, mascarpone and Parmesan. Season with salt and pepper. Serve.
 
Done. Done and done.
 
Sorry Instagram peeps. The turkeys are staying.

Before we got a dog we used to have a flock of wild turkeys in our back yard they were very arrogant and squacked really loudly when ever cars believed they had the right to cross THEIR road… Isn't weird when they fly? OK, I'm fasinated too by turkeys and I loved this dish…yes, simple and delicious. Happy New Year.

  6. I love the turkeys! We used to have so many wondering through our yard, but they moved on…I was always so fascinated by them.

  8. I love that you used shell pasta - I didn't have macaroni so it was shells or spirals, and I went with spirals. Happy New Year Cher.

  10. Do not give up the turkeys! I was once chased by turkeys in my office parking lot. They were relentless and scary. I guess I don't play well with wildlife (or farm animals, see my post this week). This was definitely a winner and one to make over and over this year (and the next and the next).   14. LOL we have flocks of turkeys that live near our house and are always going by on their morning and evening strolls... ! It's really fun when the males are all puffed out. the girls love it and patella would love it if we would let her go chase them! :)

  16. Geez, now I really need to start checking out Instagram :) Yup - this was a thankfully positive, easy and well received entry to FFWD a la 2014. A winner all around that had this Italian gal wondering why she never prepared pasta like this before. Leave it to Dorie. We stayed in PA all through the holiday and actually chilled (much as I love going north). The weather added to the chill factor and it is basically raining ice today. Nuff said. Happy New Year !

  18. I have a similar shot from my last trip to Vermont. There were over 20 in the front yard. Big suckers too. Doubt one of them would have fit in my oven.

  22. I skipped the pasta, as I was worried about ending up with gluten-free goo, but I want to try it sometime when I'm dining with gluten-full family members. It looks great. And resolutions are overrated, while turkey photos are not. Happy New Year!
