Confused (Tuesdays with Dorie: Baking Chez Moi - Energy Granola Bars)

Sometimes, the universe is just upside down. 

How am I supposed to write a post about something that I can not wrap my head around?

It's like trying to imagine an alternate reality or a fifth dimension.

There are many things that I would associate with the baking stylings of Dorie Greenspan.

Eclairs.

Cookies.

Anything chocolate. 



Granola is not one that immediately comes to mind.

Butter and heavy cream? Absolutely.

Chocolate? Indubitably. 

Pumpkin seeds and brown rice syrup, not so much.

Sometimes, the unexpected path is one worth taking.

Toasted granola and almonds. Pepitas, sunflower seeds, toasted coconut flakes (none of that freaky shredded stuff for me). Dried fruit (apricots & cranberries). Brown rice syrup was the binding agent of choice. Some time in the oven to turn everything golden brown. It was just that easy.

It was a nice reminder that delicious doesn't have to be complicated.

Now, if everything in life could be that simple...

  1. Confusing indeed... but I think the granola cake has an even bigger 'identity crisis' as baked goods go. I guess even Dorie enjoys keeping a few "January recipes" in the roster.

  4. I'm right there with you. My initial response to learning we'd be making granola bars was along the line of, "But! But! Cake!!" I enjoyed them in the end, though.

  7. These definitely were easy and delicious! I will be making these again (actually in a day or two!) These were nice to make after the influx of holiday treats.

  8. I loved how good they were for so little effort. I used the same ingredients but had to resort to unsweetened dessicated coconut...it's easier to hide.

  10. Delicious was definitely not complicated this week...which was nice, nice to have something one can whip up at the drop of a pin and have it be healthy and nutritious as well. Yours look so pretty with all the variety in them.

  16. I, too, was surprised by a granola bar recipe. After the four part Buche De Noel, though, it was nice to have a simple mix it up and bake 'em project. I was pleasantly surprised at how delicious the fresh bars were. Looking forward to more challenging baking in the future.

  23. These look tempting, except for the coconut. But I'm guessing that could be left out. I almost jumped into the Tuesday group with this recipe, but I'm definitely going to try to the cake later this month.
